Stopham Estate Pinot Gris 2015
Established in 2007 in West Sussex, Stopham Estate is owned by Simon Woodhead, a former engineer who designed parts for Formula One racing cars. Six hectares are planted with predominantly Pinot Gris and Bacchus with Stopham’s main focus producing the highest quality still wine.
Stopham Estate Pinot Gris 2015 is made from 85% Pinot Gris and 15% Bacchus. The use of special ‘Stelvin’ screwcaps enables the wine to remain super zingy and fresh, preserving the incredible purity of fruit. 2015 was a slightly tricky vintage in that it rained a lot during flowering which reduced the vines’ yield. However, the ripening season was blessed with stretches of warm weather and the grapes ripened nicely. They were harvested by hand once they’d reached the optimum balance between sugar levels and acidity. The grapes were quickly and carefully transported to the winery, (which is on-site) and immediately pressed.
There was no skin contact for this wine. The juice was fermented in temperature-controlled stainless steel tanks. In order to obtain the perfect level of sweetness, the fermentation was stopped prematurely, leaving 4.6g/l residual sugar to balance the grapes’ naturally high acidity and full aromatic profile.
Due to both Pinot Gris’ and Bacchus’ lively, zingy flavour profile no wood contact or extended aging techniques were used. To retain the desired flavour further, the wine was not allowed to go through malolactic fermentation, (MLF). MLF is a secondary fermentation process which converts the wine’s crisp, appley malic acid into soft, creamy lactic acid. You’ve most likely tasted it in rich, opulent Chardonnays.
Once the fermentation was complete, the wine was rested on its fine lees until the early summer. These fine lees are the remaining yeast cells and extended contact with the wine increases body and mouthfeel.
An off-dry style bursting with juicy peach and pear aromas alongside gentle floral tones. The palate is excellently balanced with crisp acidity and a refreshing citrus finish.
